If it's AU though...
I'm picturing Belle as a single Mom working at Roni's bar ( again, a bit spoilery but basically Regina is a bartender and her new curse name is Roni) for extra money and meets Detective Weaver one day. And she's one of the few who can break his "tough cop" exterior.
